Ingredients
6 large eggs
1/4 cup milk
1 cup diced bell peppers
1/2 cup diced tomatoes
1/4 cup chopped green onions
1 cup shredded cheese (cheddar or your choice)
Salt and pepper to taste
2 tablespoons olive oil
Instructions
Whisk Eggs: In a medium bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the bell peppers and tomatoes, and sauté for about 3-4 minutes until they are slightly softened.
Cook the Omelette: Pour the egg mixture over the sautéed vegetables in the skillet. Allow it to cook undisturbed for about 3-4 minutes, or until the edges start to set.
Add Cheese and Finish: Sprinkle the shredded cheese and green onions over one half of the omelette. Gently fold the other half over the cheese, and cook for an additional 2-3 minutes until the cheese melts and the eggs are fully cooked.
Serve: Slide the omelette onto a plate, cut into wedges, and serve warm.
Notes
Feel free to add other vegetables or meats to customize the omelette. This dish is best served immediately, but leftovers can be stored in the refrigerator for up to 2 days.
