Ingredients
2 pounds top sirloin steak, cut into large chunks
1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, minced
2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
4 carrots, sliced
3 potatoes, diced
Instructions
Sear the Beef: In a large skillet, heat olive oil over medium-high heat. Add the top sirloin chunks and sear on all sides until browned. Remove from heat.
Prepare Vegetables: In the slow cooker, add chopped onion, minced garlic, sliced carrots, and diced potatoes.
Add Beef and Seasonings: Place the seared beef on top of the vegetables. Pour in the beef broth and Worcestershire sauce. Sprinkle with thyme, rosemary, salt, and pepper.
Slow Cook: Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender.
Serve: Once cooked, shred the beef with two forks and stir it back into the sauce. Serve warm.
