Ingredients
2 cups sushi rice
2 1/2 cups water
2 tablespoons rice vinegar
1 tablespoon sugar
1/2 teaspoon salt
4 sheets nori (seaweed)
1 small cucumber, thinly sliced
1 medium carrot, julienned
1 avocado, sliced
1/2 pound cooked shrimp or tofu, sliced
Soy sauce, for serving
Instructions
Cook the Rice: Rinse sushi rice under cold water until the water runs clear. In a medium saucepan, combine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let sit for 10 minutes.
Season the Rice: In a small bowl, mix rice vinegar, sugar, and salt. Heat in the microwave for about 20 seconds until sugar dissolves. Stir this mixture into the cooked rice, fluffing with a fork. Let cool slightly.
Prepare the Nori: Lay a sheet of nori on a clean, flat surface. Place a quarter of the sushi rice in the center of the nori, spreading it into a square.
Add Fillings: Layer with cucumber, carrot, avocado, and shrimp or tofu over the rice.
Fold the Onigirazu: Fold the nori over the fillings to create a square shape, wrapping tightly. Repeat with remaining ingredients.
Serve: Cut the onigirazu in half and serve with soy sauce on the side.
Notes
For a vegetarian option, substitute shrimp with marinated tofu. These sandwiches can be wrapped in plastic wrap for easy transport and can be stored in the refrigerator for up to 2 days.
