Ingredients
6 large eggs
1 cup cottage cheese
1 cup fresh spinach, chopped
1/2 cup bell pepper, diced
1/4 cup onion, finely chopped
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheese (cheddar or mozzarella)
Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray.
Mix the Ingredients: In a large bowl, whisk together the eggs and cottage cheese until well combined. Stir in the chopped spinach, diced bell pepper, onion, garlic powder, salt, and black pepper.
Fill the Muffin Tin: Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle shredded cheese on top of each egg bite.
Bake: Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and slightly golden on top.
Cool and Serve: Allow the egg bites to cool for a few minutes before carefully removing them from the muffin tin. Serve warm or store for later.
Notes
These egg bites can be stored in the refrigerator for up to 4 days. For freezing, wrap each egg bite individually and store in an airtight container for up to 2 months. Reheat in the microwave before serving.
