This easy sheet pan hot honey chicken and zucchini recipe offers a delicious one-pan dinner that’s full of flavor and quick to prepare. Perfect for busy weeknights, it combines juicy chicken thighs with tender zucchini, all drizzled with a sweet and spicy hot honey sauce.
Ingredients
4 boneless, skinless chicken thighs
2 medium zucchinis, sliced into half-moons
1 tablespoon olive oil
2 tablespoons hot honey
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper to taste
Fresh parsley, for garnish
Instructions
Preheat the Oven: Preheat your oven to 425°F (220°C).
Prepare the Chicken: In a large bowl, combine the chicken thighs, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until the chicken is well coated.
Arrange on Pan: On a large sheet pan, arrange the seasoned chicken thighs in the center. Spread the sliced zucchini around the chicken.
Add Hot Honey: Drizzle the hot honey evenly over the chicken and zucchini.
Bake: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C) and the zucchini is tender.
Garnish and Serve: Remove from the oven, garnish with fresh parsley, and serve immediately.
Notes
You can substitute chicken breast for thighs if preferred. Store leftovers in an airtight container in the refrigerator for up to 3 days.
