Ingredients
4 bone-in chicken thighs
2 cups broccoli florets
1 cup baby carrots
1 red bell pepper, sliced
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried thyme
Salt and pepper to taste
Instructions
Preheat the Oven: Preheat your oven to 425°F (220°C).
Prepare the Chicken: Pat the chicken thighs dry with paper towels and place them on a large sheet pan.
Season the Chicken: Drizzle the chicken with 2 tablespoons of olive oil, then sprinkle with garlic powder, paprika, thyme, salt, and pepper. Rub the seasoning into the chicken for even coverage.
Add the Vegetables: In a mixing bowl, combine the broccoli, baby carrots, and sliced bell pepper. Drizzle with the remaining olive oil and season with salt and pepper. Toss to coat.
