Description

This one-pot French onion rigatoni combines the rich flavors of caramelized onions with creamy pasta for a comforting meal. Perfect for a cozy dinner, this viral recipe is both simple and satisfying.

Ingredients

Scale

12 ounces rigatoni pasta

4 large yellow onions, thinly sliced

3 tablespoons olive oil

2 tablespoons unsalted butter

4 cloves garlic, minced

4 cups beef broth

1 cup heavy cream

1 tablespoon fresh thyme leaves

1 teaspoon salt

1/2 teaspoon black pepper

1 cup grated Gruyère cheese

1/2 cup grated Parmesan cheese

Fresh parsley for garnish

Instructions

Caramelize the Onions: In a large pot, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized, about 25-30 minutes. They should be golden brown and soft.

Add Garlic and Herbs: Stir in the minced garlic and fresh thyme. Cook for an additional 2-3 minutes until fragrant.

Cook the Pasta: Add the rigatoni to the pot along with the beef broth, salt, and black pepper. Bring to a boil, then reduce the heat and simmer for about 12-15 minutes or until the pasta is al dente, stirring occasionally.

Stir in Cream and Cheese: Once the pasta is cooked, stir in the heavy cream and Gruyère cheese until melted and creamy. If desired, add more beef broth for a thinner consistency.

Serve: Garnish with grated Parmesan cheese and fresh parsley before serving. Enjoy your comforting one-pot meal!

Notes

For a vegetarian version, substitute beef broth with vegetable broth. This dish is best served fresh but can be stored in an airtight container in the refrigerator for up to 3 days.
