Ingredients
1 cup granulated sugar
1/4 cup water
1/2 cup heavy cream
2 tablespoons miso paste
1/4 cup unsalted butter
1 teaspoon vanilla extract
1/4 teaspoon sea salt
Instructions
Prepare the Caramel: In a medium saucepan over medium heat, combine the sugar and water. Stir until the sugar dissolves, then stop stirring and allow the mixture to come to a boil.
Cook the Sugar: Continue to boil the sugar mixture until it turns a deep amber color, about 8-10 minutes. Watch closely to avoid burning.
Add Cream and Miso: Remove the saucepan from heat and slowly whisk in the heavy cream and miso paste until smooth. Be careful, as the mixture may bubble vigorously.
Incorporate Butter and Flavor: Add the unsalted butter, vanilla extract, and sea salt to the mixture, whisking until fully combined and creamy.
Cool the Caramel: Allow the caramel to cool for a few minutes in the saucepan. Then, transfer it to a heatproof jar or container and let it cool to room temperature.
Notes
This caramel can be stored in the refrigerator for up to two weeks. Reheat gently in the microwave before using if it becomes too thick.
