Mild Japanese Ground Beef Curry

Description

This Japanese ground beef curry is a flavorful and mild dish, perfect for family weeknight dinners. It’s easy to make and pairs beautifully with steamed rice.


Ingredients

1 pound ground beef

1 medium onion, finely chopped

2 medium carrots, diced

1 medium potato, diced

2 cloves garlic, minced

1 tablespoon ginger, minced

3 cups water

1 tablespoon soy sauce

1 tablespoon Worcestershire sauce

1 package (3.5 oz) Japanese curry roux (mild)

2 tablespoons vegetable oil

Salt and pepper to taste

Cooked rice, for serving


Instructions

Sauté the Vegetables: In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, diced carrots, and diced potato. Sauté for about 5-7 minutes or until the vegetables start to soften.

Cook the Beef: Add the ground beef to the pot and cook until browned, breaking it apart with a spoon, about 5 minutes. Drain excess fat if necessary.

Add Aromatics: Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

Simmer the Curry: Pour in the water, soy sauce, and Worcestershire sauce. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.

Add Curry Roux: Break the curry roux into pieces and stir it into the pot until fully dissolved. Continue to simmer for another 10 minutes, stirring occasionally, until the sauce thickens.

Season and Serve: Taste and adjust seasoning with salt and pepper as needed. Serve the curry over cooked rice.

Notes

For a vegetarian version, substitute ground beef with lentils or a meat alternative. Leftovers can be stored in the refrigerator for up to 3 days.
