Ingredients
1 lb ground beef
1 cup cooked rice
1 medium onion, diced
2 cloves garlic, minced
1 large head of cabbage, chopped
1 can (15 oz) diced tomatoes
4 cups beef broth
2 tablespoons tomato paste
1 teaspoon dried oregano
1 teaspoon paprika
Salt to taste
Pepper to taste
1 tablespoon olive oil
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
Brown the Beef: Add the ground beef to the pot and cook until browned, breaking it apart with a spoon as it cooks, about 7-10 minutes.
Combine Ingredients: Stir in the chopped cabbage, cooked rice, diced tomatoes, beef broth, tomato paste, oregano, paprika, salt, and pepper. Bring to a boil.
Simmer the Soup: Reduce the heat to low, cover the pot, and let it simmer for 30-40 minutes, stirring occasionally until the cabbage is tender.
Serve: Ladle the soup into bowls and garnish with fresh parsley before serving.
Notes
This soup can be stored in the refrigerator for up to 4 days. To reheat, simply warm it on the stovetop until heated through.
