3 cups marinara sauce

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Instructions

Prepare the Eggplant: Sprinkle the sliced eggplant with salt and let it sit for 30 minutes to draw out moisture. Rinse and pat dry with paper towels.

Bread the Eggplant: Preheat the oven to 400°F (200°C). Dredge each eggplant slice in flour, dip in beaten eggs, and coat with breadcrumbs mixed with garlic powder, oregano, and black pepper.
