Ingredients
8 ounces rice noodles
1/4 cup creamy peanut butter
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon honey
1 tablespoon sesame oil
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
1/2 teaspoon red pepper flakes
1 cup carrots, shredded
1 cup bell peppers, thinly sliced
1/2 cup green onions, sliced
1/4 cup cilantro, chopped
1/4 cup chopped peanuts for garnish
Instructions
Cook the Noodles: Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions, usually about 4-6 minutes. Drain and rinse under cold water to stop the cooking process.
Make the Peanut Sauce: In a bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, and red pepper flakes until smooth.
Combine Ingredients: In a large mixing bowl, combine the cooked noodles, shredded carrots, sliced bell peppers, and sliced green onions. Pour the peanut sauce over the noodle mixture and toss until everything is evenly coated.
Chill and Serve: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, toss again and garnish with chopped cilantro and peanuts.
