This delightful picnic cake features layers of fluffy vanilla cake topped with a vibrant mix of fresh berries, making it a perfect centerpiece for your outdoor entertaining. Easy to transport and visually appealing, it’s sure to impress at any picnic party.

Ingredients

Scale

2 cups all-purpose flour

1 ½ cups granulated sugar

1 cup unsalted butter, softened

4 large eggs

1 cup milk

2 teaspoons vanilla extract

1 tablespoon baking powder

½ teaspoon salt

2 cups mixed fresh berries (strawberries, blueberries, raspberries)

1 cup whipped cream

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

Mix the Batter: In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the milk and vanilla extract.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.

Bake the Cakes: Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Prepare the Topping: Once the cakes are cooled, spread a layer of whipped cream on top of one cake layer. Add a generous amount of mixed fresh berries on top of the whipped cream.

Assemble the Cake: Place the second cake layer on top and repeat the process by spreading whipped cream and adding more berries on top.

Serve: Slice the cake and serve it at your picnic, enjoying the fresh flavors and aesthetic presentation.

Notes

For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend. Store any leftovers in the refrigerator for up to 2 days.
