This Beet Reuben Sandwich is a gut-healthy vegetarian twist on the classic, featuring roasted beets, tangy fermented sauerkraut, and creamy vegan dressing. Perfect for a satisfying plant-based lunch!
Ingredients
4 slices of rye bread
2 medium beets, roasted and sliced
1 cup fermented sauerkraut
1/4 cup vegan mayonnaise
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
Salt and pepper to taste
1 tablespoon olive oil
Instructions
Prepare the Dressing: In a small bowl, mix together the vegan mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper until well combined.
Toast the Bread: Heat a skillet over medium heat. Add a little olive oil and toast the rye bread slices until golden brown on both sides.
Assemble the Sandwich: Spread a generous layer of the dressing on one side of each slice of toasted bread. Layer the roasted beet slices and fermented sauerkraut over two of the slices.
Finish the Sandwich: Top with the remaining slices of bread, dressing side down. Press down gently and slice in half.
Notes
For extra flavor, consider adding sliced avocado or a sprinkle of caraway seeds. Store any leftovers in an airtight container in the refrigerator for up to two days.
