Ingredients
2 salmon fillets (6 oz each)
1 tablespoon olive oil
1 teaspoon ground turmeric
1 teaspoon garlic powder
Salt and pepper to taste
4 cups mixed greens (spinach, kale, arugula)
1 cup cooked quinoa
1 avocado, sliced
1/4 cup cherry tomatoes, halved
2 tablespoons lemon juice
1 tablespoon pumpkin seeds
Instructions
Prepare the Salmon: Preheat the oven to 400°F (200°C). In a small bowl, mix the olive oil, turmeric, garlic powder, salt, and pepper. Rub this mixture over the salmon fillets.
Bake the Salmon: Place the seasoned salmon on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
Assemble the Bowl: In a large bowl, layer the cooked quinoa, mixed greens, sliced avocado, and cherry tomatoes. Top with the baked salmon.
Dress the Bowl: Drizzle the lemon juice over the bowl and sprinkle pumpkin seeds on top for added crunch.
