Description

This chicken broccoli soup slow cooker recipe is creamy, comforting, and perfect for weeknights. Just toss in your ingredients and let the slow cooker do all the work.


Ingredients

1 lb boneless, skinless chicken thighs or breasts

2 cups broccoli florets

1 medium onion, chopped

3 cloves garlic, minced

2 carrots, sliced

4 cups chicken broth

1 cup heavy cream

1 tsp salt

1/2 tsp black pepper

1/2 tsp thyme

1 tbsp olive oil

Optional: shredded cheddar cheese, cornstarch slurry (1 tbsp cornstarch + 2 tbsp water)


Instructions

1. Place chicken, carrots, onions, garlic, broth, and seasonings into slow cooker.

2. Cook on LOW for 6–7 hours or HIGH for 4 hours.

3. One hour before end time, shred chicken with two forks inside the pot.

4. Add broccoli and cream, stir well.

5. Let it cook on LOW for another hour.

6. (Optional) Stir in cornstarch slurry to thicken.

7. Taste and adjust seasoning. Serve hot with toppings.

Notes

Add broccoli only in the last hour to avoid mushy texture.

Use cream cheese instead of cream for extra richness.

Freeze in portions before adding dairy to preserve texture.
