Description
A slow cooker beer cheese soup that’s rich, creamy, and full of comforting flavor—perfect for chilly nights or game day gatherings.
Ingredients
2 cups sharp cheddar cheese, shredded
1 cup beer (lager or amber ale)
1 cup heavy cream or evaporated milk
1 small onion, chopped
2 cloves garlic, minced
2 tbsp butter
1 tbsp Dijon mustard
1 tsp Worcestershire sauce
1/2 tsp smoked paprika
1/4 tsp cayenne pepper (optional)
Salt and pepper to taste
Instructions
1. Sauté chopped onion and garlic in butter until soft.
2. Transfer to the slow cooker with beer, Worcestershire sauce, mustard, and seasonings.
3. Cook on LOW for 4 hours or HIGH for 2 hours.
4. Stir in cream and cheese in the last 30 minutes.
5. Blend until smooth, serve with bacon bits or pretzels.
Notes
Use freshly shredded cheese to avoid graininess.
Avoid overly hoppy beers which may add bitterness.
If freezing, add cheese after reheating for best texture.
